Pretty much anything you would use ground beef for, use ground turkey instead.

you can mix the turkey with a little olive oil, minced onion and garlicl to keep it moist :agree also put a little olive oil over the top too before baking

ive made this with tofu/soy sausage before and it came out great.

in mixtures similar to the stuffing, like meatballs or whatever, if i dont have breadcrumbs ill usually take a slice of white bread or something and dunk it in milk, and add that into the mixture ---- altho ive only done that with meatballs so i dunno how well it would turn out

jess - ive noticed its the same thing wit buffalo meat - def gotta throw some olive oil in there beforehand so it doesnt dry out when cooking

And I like the tofu suggestion. But mike won't eat tofu. Maybe I could just tell him the tofu is chunks of cheese. :sneaky

For a different stuffed peppers, tomatoes, etc and a greek healthy twist, mix it with brown rice as well. Sprinkle whole wheat breadcrumbs on top with a drizzle of oil. If you want you can even mix in some crumbled feta.

i used to make like chop steaks with them. season them and mix fennel seed in them. then serve them up with some sliced tomato and red onion and italian dressing. easy breezy and tasty.
