View Full Version : Almond crusted chicken

making this in a little while- ill post pics when its done

1 cup almonds
1 1/2 teaspoons Spanish pimenton or paprika
2 large eggs whites
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breasts
3 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter, melted



chop the almonds in a mini-chopper or food processor. Transfer the nuts to a shallow dish and stir in the paprika. Lightly whisk the egg whites in another shallow dish. Pat the chicken dry and season both sides with salt and pepper. Dip each piece of chicken into the egg, letting the excess fall back into the dish. Then press both sides of the chicken into the nuts to coat. Place on a baking sheet, cover, and refrigerate for at least 20 minutes to set the crust.

Preheat the oven to 350 degrees F. Place rack on a baking sheet.

Heat a medium nonstick skillet over medium-low heat and add 1 tablespoon of the oil and the butter. Place the chicken smooth-side down in the pan and then raise the heat to medium-high. Cook turning once, until the nuts set and turn golden brown, about 3 to 4 minutes per side. Transfer meat to the prepared pan and bake about 20 minutes.

its in the oven now. it was a quick 5 minute meal

she put parsley in with the almonds and a tiny bit of breadcrumbs

she fried the cutlets on the both sides and finished them off in the oven.

your way sounds much healthier. I'm gonna try this one night :agree

i have almonds laying around, and chicken tenders.

i have some mushrooms at home too, im gonna make some balsamic mushrooms to serve it with.

Sounds great. Plus its healthy. U may just wanna sprinkle some adobo on it. I didn't but I rarely use salt

Good for you! Hiw great do you feel too? Eventually this will become a lifestyle for you- nit a diet.

i feel great :) im still need to make some tweaks to clean up what i eat a bit more, but im gettin there. the good thing is is that im actually doing something about it and ive gotten back to the gym too. I'm trying not to totally limit myself though bc i dont want to freak myself and get off track completely. But i am definitely seeing results, so thats motivating me to go for it even more :)

For a nice presentation I'd lay it on some mesculine lettuce and drizzle some vinegar over it

made this tonight, came out great...i made a few edits--i added cayenne pepper and nutmeg to the almonds and it was awesome...and i didnt pan fry them, well bc i forgot LOL and they still came out good. Next time im going to make a hommade honey mustard to go with them :agree and serve over a bed of greens

funny u said u forgot to fry them in the pan..bc yesterday when i made them..i forgot too!!! hahha
mine still came good as well. fryinh them for the few minutes makes the nuts stick better and def adds alittle more taste t it.

i served mine last night on mesculine letteuce w slivers of strawberrys, a few (like 4) sugar coated sauted nuts, then i drizzled vinegar over the whole plate

glad u liked it:yipee

For the potatoes, I used a mandoline slicer to cut them into crinkle cuts, and threw them into a zip lock bag with 1/4 cup of smart balance oil, and Splenda brown sugar. I tossed them around, and laid them on to a cookie sheet.

For a veggie, I steamed some Trader Joes French cut string beans, and added a little garlic.



Everything came out amazing!!!

btw i saw on tv somewhere crusting chicken cutlets w/ crushed up doritos. Looked good as hell.

in the oven as we speak.
I added some fresh flat leaf parsley to the almonds before I put them in the blender (dont have a food processor), added salt, pepper, paprika and some grated romano cheese (a small amount) to the almond mixture.
