i talked to my aunt on Friday, and she suggested this recipe we saw online......
She couldn't give me exact measurements, but she says this is VERY close to the one she uses.
Flaky Dough
* 4 cups flour
* 3 egg yolks, beaten
* 2 tablespoons sugar
* 1/4 teaspoon salt
* 2/3 cup water
Filling
* 1/2 kg ground pork
* 4 potatoes, diced
* 1/2 cup raisins
* 1/4 cup lard
* 1/4 cup sugar
* 1/2 teaspoon msg
* 1 chopped onion
* 2 tablespoons sweet pickle relish
* 1 cup boiled minced garbanzo beans
* 1/2 cup water
* salt and pepper
Directions
1.
1
Mix beaten eggs, water, salt and sugar and mix well.
2.
2
Add this to the flour and knead well until very smooth.
3.
3
Let rest for 10-15 minutes.
4.
4
Roll on board slightly dusted with cornstarch until very thin.
5.
5
With pork lard brush surface thoroughly.
6.
6
Start rolling tightly as jelly roll.
7.
7
Cut very fine around 2 mm.
8.
8
Set aside.
9.
9
On the same dough, pinch a portion and make as many as the ojadre (the rolled one) put the ojadre on top of the small ones, brush with melted lard, cover with banan leaf as thin as posible to a round form.
10.
10
Put 1 tbsp filling in the center, put 1 sliced of hard boiled eggs, form the empanada, as turnover, flute the edges and fry in deep hot fat until golden brown.
11.
11
To prepare filling: heat lard, add garlic, onions and ground pork.
12.
12
Cook for a while.
13.
13
Add diced potatoes and all the ingredients, cook until all ingredients are tender.
14.
14
Season to taste.
15.
15
Add 4 tbsp flour, stir very welll until all ingredients have blended.
16.
16
Let cook until ready to use.

btw jess....we also came across this link below...and noticed it was mentioned that its similar to cuban piccadillo? Is this true?
http://www.squidoo.com/homemade-empanada-recipes
"Homemade Filipino Empanada Recipe
One of the distinct quality of Filipino Empanadas is similarly somewhat to the Cuban piccadillo. Some Filipinos are not partial to a more sweeter flavor and much prefer the Hispanic version. Doughy baked and flaky fried version are the most commonly found delicacy."

they are these circle dumpling things, that are somehow injected w/ french onion soup, and coated w/ a smelly good cheese and broiled enough to geth the cheese melted. They're eaten w/ toothpick thingys and and are boiling burning mouth hot when you bite into them.

I think they are "injected" the same way soup dumplings at chinese spots are. The soup part is frozen, then wrapped in the dumpling, then cooked. I think :shrugger
