what ingredients did you use?? to me, sounds like you may have put in egg but not enough breadcrumbs or soaked bread

I did the bread

I used bread crumbs, eggs, um parm cheese, lots of spices


um exactly how much eggs am I supposed to put?!

I tried cooking them two diff ways..

first browning them a lil them putting them in sauce


then some others I browned then put in the oven.


the first ones fell aprt in the sauce. the other ones I browned a lil moar thinking that was my prob. and they came out too brown on the outside and mushy in the inside

um exactly how much eggs am I supposed to put?!

honestly, it depends - i usually put in just one egg for the entire mixture (lb of meat i believe) ---- the way i usally do it is when i mix the ingredients, i make a practice ball (that sounds weird) and lay it down and see how quickly it flattens - it should be a somewhat slow movement - at least thats how i do it - i think tonibunz mentioned it once before in a thread, and how she sometimes soaks bread in water or milk - maybe that helps?

of course - the liquid is what makes them fall apart! altho i do put only one egg, i add some milk too, but only a little at a time - like i said, next time just try out the "practice ball" before you prepare them to be cooked

dont give up! practice makes perfect!! plus you can do a whole lot with them once you get good at making them - i've had meatballs stuffed wit bleu cheese, meatballs with pancetta mixed in, stuff like that ---- just keep it in mind for next time

might sound a lil weird but i use damp wheat bread somtimes 2 make a kinda paste when i make meatballs... i think it helps 2 hold them together

more breadcrumbs. and you gotta fry them for a little before you put em in the sauce. that should do the trick

it sounds like the meatballs were too wet... if that ever happens again, add more breadcrumbs and cheese.

i never fry mine and just let them cook in the sauce and they always come out fine..

also, if you're not careful, you can break the meatballs when stirring the sauce.

my recipe :)

In a bowl, combine:
1lb ground beef (85%)
2 large eggs
(beat the eggs in the side of bowl first before mixing everything together)
A large handful of grated Romano Cheese (you can use parmesean but romano works better for cooking)
2 garlic cloves (I use a garlic press, but if you don't have one just mince them into really small pieces)
a generous amount of salt (low sodium)- be careful though bc the cheese is salty
a little black pepper
chopped fresh flat leaf parsley- a small handful

1/2 loaf stale italian bread- wet it under the faucet and use the inside white part only (squeeze excess water out)
If you don't have Italian bread you can use a big handful of plain breadcrumbs (I wouldn't recommend using the pre-seasoned kind)

**If you're going to use bread, wet it first before combining any ingredients so you give it a chance to get moist

Mix all ingredients together

in a large frying pan, heat up regular olive oil over a medium flame (enough to coat the bottom plus a little extra)
You can probably bake these for a healthy alternative, but i've never tried it before lol I love the way they taste fried.

Since we add ours to a pot of homemade sauce, I only brown the outsides and finish cooking them in the sauce for about an hour or so on low.
If you're going to eat them plain, obv just cook them until they aren't raw inside and transfer cooked meatballs to a paper towel lined plate.

Just increase your bread proportion. Just sounds like they didnt have enough in them to hold them together. But good job anyway!!! Just make them again. Listen the best part about cooking is that your mistakes can be very delicious.

LOL it was a nightmare!



and I DID use bread soaked in milk :giveup


I thought I put enough bread crumbs tho. I think I put too much egg :hide

I alwasy bake them first... 350 for 25 mins then put sauce over them...i'm probably not doing it right

a garlic clove finely diced
some oninon finely diced
parsely
parmagiano regiano grated
a pinch of salt
some black pepper
bread comes

beat the egg first and then through in all the ingredients in a bowl and mush together till it's sticky. A trick to try.....make the whole thing into a ball....pick it up...if any of it falls off...to wet add bread crumbs.

Throw it in my sauce and let it simmer.

Which means after last night there's probably about 20 left which means we probably cant eat more than about 2-3 more of them before tomorrow's dinner. :shuffle

I also use a combination of Ground Beef & Ground Veal (and sometimes Ground Pork if I feel like it). It really gives it a nice flavor.

definately too much stirring would break them and also the milk makes the meat soft... soak in water and make sure to squeeze out all moisture first :shuffle

Mmmmmmmmm i made my meatballs today i woke up early to make them for the office since we all reached out weekly Goals... and ahhhhhhh SO DELISH. My manager who is pregos with twins ate 3 plates.. i ate 2 :shuffle so fukin good- JEN- ill come over we make them together one day :chuckle you should really try my recpie you wont be disappointed @ all!
