View Full Version : Pioneer Womens Cajun Meatloaf

I made this the other night. It was slightly different than my normal meatloaf but it came very tasty. I just didnt use all th ebutter she called for and I only used ground turkey.
* 2 Medium Onions
* 1 bunch of Celery (5-6 ribs)
* 8-10 Cloves of Garlic
* 3 Eggs
* 2 Tablespoons of Butter
* 1-2 cups of Breadcrumbs
* Ground Nutmeg
* Black Pepper
* Cayenne Pepper
* 1/2 Cup of Milk (Whole is probably best…I only had 2% on hand)
* 1 Tablespoon Worcestershire
* 2 Cups of Ketchup
* 2 Tablespoons Honey
ground turkey

dice up all of our produce into small pieces-saute in butter. add spices to saute mix. add worchestershire an dketchup.

After allowing this mixture to cook over a medium-high heat for a few more minutes, we’re going to remove the skillet from the heat and start cooling things down a bit. Then add in about 1/2 cup of milk. I used skim.
Continue adding breadcrumbs and working them into the mix until you get a nice, thick paste. I added in at least another 1/2 cup to achieve this consistency.Beat the 3 eggs together and add them to the meat.

Add veg mixture
Blend. Form meatloaf. Mix together 3/4 cup of ketchup with about 2 tablespoons of honey. This will be our topper.

This was the one recipe on the site that I was not interested :shuffle I think the "cajun" turned me off. Not a big fan. But if you say it's good..maybe i'll try it. Try to post a pic when you can. Maybe yours was too big or something. I was having problems posting pics the other day.

Toni-I HATE meatloaf. I think it is slimy and gross. But Ginz likes it so I make it every other week for him. It is si,mple to make and it makes 2 meals not one so it is easy for me during the week. You wont dare catch me eating it. But he loved this one!
