Depends on what kind of Hummus you want, there are tons of different kinds, Roasted Red Pepper Hummus, here is a recipe from my schools Garde Manger book

Hummus
Yield 1 quart

1.5 lbs- cooked chick peas, drained
4oz/wt- tahini(sesame paste)
6oz/fl- lemon juice, or to taste
1/4 cup- extra virgin olive oil
4 each- garlic gloves
1tbsp- salt
to taste- black pepper

combine all ingredients and puree in food processor, add water to thin if needed..............:D
