    Quick and Easy Recipes

    I would really love if we had a post/sticky with contributions for quick and easy recipes. I know a lot of us work and can't devote hours in the kitchen, so I think it might be helpful if we post yummy recipes (that are also healthy and nutritious) for reference.

    Anyone agree?

    I will post some.

    Hummus Pita Pizza

    Take one whole wheat pita. Cover with hummus of your choice (I always use regular hummus) and then dice up little pieces of low fat cheese of your choice. I always use garlic and herb spreadable cheese--so good!!! Drizzle with a little EVVO and some spices and bake for about 15 minutes. VOILA--a very good and healthy treat!!

    Here is another favorite of mine to make:

    Salmon Pesto over Whole Wheat Pasta

    Start by taking some salmon from a can (I promise, it's yummy!) and sautee over a very low flame for about a minute. Add into 2 heaping tablespoons of Pesto Sauce and sautee for about 2 minutes. While this is heating up, cut up some low-fat or non-fat mozzarella cheese and add on top. Stir it all together and add it to the top of some whole wheat pasta.

    Enjoy!!!

    both of those sound great! Ive never had salmon in a can though lol. What brand?

    roasted fingerling potatoes with olive oil, rosemary, garlic and salt and pepper with pan seared sirloin steak

    cut the potatoes in quarters, mix in the ingredients and throw them in the oven the minute you get home and marinate your steak with salt and pepper

    then when theyre nice and crispy and almos done...get a pan screaming hot...put some olive oil, and throw the steak on....let it sear to get a nice crust for a few minutes without touching, then flip over and let finish cooling....and thats it!

    SO easy, but so amazing

    I eat this salad almost every day (if I have all the ingredients), it's so crisp, refreshing (has a little kick) and filling! All items from TJs

    Romaine lettuce leaves
    Cuban style black beans
    Canned corn
    shredded light 3 cheese blend
    jalapeno tortilla chips
    roasted salsa

    Chop up enough lettuce for how big you want your salad. Put a couple of scoops of black beans, a couple of scoops of corn, a couple scoops of salsa, half a handful of shredded cheese and crunch a handful of chips over the top. Enjoy!

    wow this sounds im working late tonight so ill be making that when i get home from work, i definately need alot of easy prep recipes as well..

    yummmmm though anything that involves cutting potatoes is definately not something im ready to do when i get home from work at 10pm lol

    I get the brand from Costco and it's REALLY good. I wouldn't try any other brand because Costco is based in Seattle and Seattle has really great salmon.

    Here's a yummy salad recipe that I make ALL the time.

    Chopped up spinach in a bowl. Dice up one tomatoe and throw it in. Toss in some pecans and some crumbled up gorgonzola and spritz with some raspberry vinagrette. DELICIOUS!!!!

    And I always make this yummy Lamb Chop recipe too!

    Lamb Chops in Honey/Wine Sauce

    Take 2 cups of wine and let it simmer over a low flame for about 15 minutes. At the same time, grill some lamb chops. You should first coat them with a little EVVO, salt, pepper and some oregano or thyme. Depending on the thickness of the cut, they probably need about 4-7 minutes on each side.

    Once the wine has simmered for about 15 minutes, add 2 tablespoons of honey, salt, pepper (to taste) and some chopped up thyme or rosemary (fresh works best, but I've also used dried and it's still delicious). Whisk the ingredients to gether in the pain until the honey has dissolved and remove from the flame. Take a bowl and pour in the wine mixture and let the chops sit in the bowl for about 5-10 minutes. Serve and ENJOY!!!

    I've posted this before, but it's such an easy and yummy recipe.
    You can use either pork or veal chops.
    Pan fry the chops a few minutes on each side, remove chops and deglaze the pan with raspberry preserves and a tsp of balsamic vinegar (about 30 seconds til the preserves get liquidy) and pour over the chops. Serve with some steamed spinach which you can throw in the microwave for 3 minutes while cooking the chops.

    By the way, have you ever tried those recipes from Fresh Direct? You know, the ones that you choose the recipe and they send all the ingredients? I want to try, but want to hear a review first.
