    i was trying to figure out dinner and came up with this idea:

    combined in a wok
    1 can cream of chick soup i had in the cabinet
    some left over chicken (few thighs and a breast) shredded
    can of peas
    whole wheat penne
    topped off with some fresh grated parm cheese.

    it was actually pretty good

    I made salmon yesterday for the first time!! Soo easy

    I put the salmon into the oven, covered it with aluminum foil for 15 mins. After 15 mins i took off the foil then seasoned the salmon with squeezed lemon, garlic (minced) and parsley.and left if for 15 more mins, yummmmmmm.

    but i underseasoned veggies which i mixed with mushrooms and garlic. Need to season the veggies more next time.

    Did the salmon pick up the aluminum flavor at all? I want to start baking fish in the oven, but I was told to use parchment paper instead.

    that's what i cooked the fish in, a pyrex fish like this one.

    andi put the aluminum on top of the dish and folded the aluminum foil around the edges so that it would budge. It never actually touched the fish.

    i know some cook the fish wrapped in aluminum with poked wholes. I steer clear of that because i dont want the risk of brain damage in the future. whether it's true or not, i dont want to be the guinea pig lol

    I decided to try and make plantain chips lol I bought green/yellowish plantains. I cut them and put em on a pan with small pieces of garlic and cooked it on olive oil and low heat. When they started to turn yellow i flipped them over. I seasoned it with salt garlic powder and parsley. It was a nice side dish! Just keep the heat on low otherwise they burn easily like some of mine did lol.

    Now i wanna buy yellowish/blackish plantains and cook them and then drain them in honey, yummm.

    Quick and easy:

    Take one yam. Stab it about 30 times with a fork all over and then microwave it on "potato" setting on your microwave or if you don't have one, for about 5 minutes on high.

    Take it out, slice it open. Put some margarine (or butter, whatever your preference is) and some cinnamon (optional) and ENJOY!!!

    I make this atleast once a week super super easy.

    1 Perfect Portions chicken breast chopped and browned in a skillet with 1 tsp peanut oil (or seasame oil)
    Toss in some chopped peppers and onions and another tsp peanut oil
    Then add some matchstick carrots, broccoli, and any other veggies you want (I like snap peas)
    1 Tbsp Hoisin sauce....let simmer for 3-5 minutes
    Sprinkle with chopped dry roasted peanuts and yum!

    I usually have a sweet potato with it

    my friend made this yesterday for our "Mexican" themed dinner LOL
    it was amazing (and not healthy at all )

    one block of velveeta cheese
    24 oz jar of chunky salsa-used tostito brand
    place in microwave safe bowl
    microwave for 10 minutes - stirring every few minutes (or longer depending on strength of microwave)

    serve with tostitos

    Grilled Chicken Delight

    Grilled chicken breast, arugula, sliced avocado, sliced tomato and pesto mayo. You can eat it on a regular roll OR you can bake pastry dough and layer it like a club sandwich. Anyway you slice it, it's DELICIOUS!!!

    Healthy Veggie Soup

    About 2 cups of each:

    Chopped up celery
    Chopped up carrots

    About 1 cup:
    Chopped up tomatoes

    About 1 cup:
    White cannelini beans (rinsed and pre-heated)

    Take half of a white onion, chop it up. In a saucepan put in olive oil and sautee the onions for about a minute. Add in the celery, carrots & tomatoes. Add enough water that it's DOUBLE the amount of veggies. Stir and boil. Add salt & pepper. After about half an hour, the veggies should become soft. Add the beans. Simmer for 5 minutes. Add about 2 tbs of olive oil. Simmer for another 5-10 minutes.

    quick dinner....whole wheat past w/ peas

    sauteed some onions in olive oil, added a can of drained peas, added a few cups of water, parsley, salt & pepper. Cook on medium heat for about 15 minutes.
    mixed in some cooked whole wheat pasta...I used spiral last night..

    healthy & quick =)

    Pie: flour (2 cups), sugar, baking powder for crust. Blueberries and sugar (1 cup) for filling. 20 minutes at 375.

    well i always have at least a bag of baby spinach or two in the fridge.
    light ranch dressing too.

    i get the tortilla crouton things or a handfull of doritos or whatever tortilla chips...

    then when im like.. "o i want a southwestern salad for dinner" i go tot wendys drive thru and get a small chili.

    crunch the chips. slice the spinach and mix it all in.

    not bad... nothing to binge on... nice dinner snack...

    That potato picture is too funny. I'm stealing that idea for Thanksgiving this year! Wendy's chili makes my stomach hurt way way too much.
    Love apple pie it puts me in a good mood, but mostly I love fresh seafood!
