    Interesting Side Dishes

    I am hosting a dinner party NYE and I am looking for some yummy interesting sides to go with my Prime Rib..

    Preferably one potato style recipe and two veggies...

    we had prime rib on Christmas

    We had simple sides though...

    Broccoli Rabe , Suateed mushrooms and roasted potatoes (seasoned with salt, pepper and fresh rosemary). The potatoes were small and we cut them in half. I don't remember what kind they were, but some of the potatoes were red, dark purple, white....

    TWICE BAKED NEW POTATOES
    ive served these as an app..but they work great as a side too

    1 1/2 pounds small red potatoes
    2 tablespoons vegetable oil
    1 cup shredded Monterey Jack cheese
    1/2 cup sour cream
    1 package cream cheese, softened
    1/3 cup minced green onions
    1 teaspoon dried basil
    1 garlic clove, minced
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 pound sliced bacon, cooked and crumbled


    stab potatoes; rub skins with oil. Place in a baking pan. Bake, uncovered, at 400 degrees for 50 minutes or until tender. Allow to cool to the touch. In a mixing bowl, combine Monterey Jack, sour cream, cream cheese, onions, basil, garlic, salt and pepper. Cut potatoes in half; carefully scoop out pulp, leaving a thing shell. Add pulp to the cheese mixture and mash; stir in bacon. Stuff potato shells. Broil for 7-8 minutes or until heated through.

    So did we!

    We had twice baked potatoes, salad, and corn on the side.



    A good side dish would be something with sweet potatoes...maybe homemade sweet potato fries

    mmm yeah broccoli rabe is always great!
    or never fail ideas are stuffed artichokes or stuffed mushrooms.
    also asparagus roll ups, a nice salad, artichoike spinach dip,
    hmm give nme an idea of what type of veg an dill look i my recipes

    Garlic Peas.

    INGREDIENTS:

    1 pkg. Frozen Peas (defrosted)
    Lots of fresh garlic diced (to taste!)
    5 Tbs of Virgin Italian Olive Oil (to taste, rarely measured)
    Dash of Salt and Pepper
    Abundant amounts of Fresh Basil

    --------------------------------------------------------------------------------

    DIRECTIONS:

    First step is to cook the peas so that they are tender but not mushy. Drain all the water off when finished cooking. In a large skillet, just WARM the olive oil for a brief moment. (Don't alter or lose the tast of the oil). For those faint of heart the warming can be omitted. Turn off the flame. Dump in the cooked peas, diced garlic and shredded basil.

    that sounds good. My mom makes something like this, but adds potatoes too.

    bacon/broccoli/raisin/pecan salad

    1 package bacon
    2 bunches broccoli, chopped
    3/4 cup raisins
    3/4 cup pecans, chopped
    1/2 cup red onion, diced
    1 1/2 cups cole slaw dressing


    Prepare Bacon according to package directions. Crumble into small pieces. In a large bowl, combine bacon, broccoli, raisins, pecans and onions. Pour dressing over and toss to combine

    but broccoli rabe is sooo much better

    Carmalized greeen beans w walnuts

    3 tablespoons butter
    1 pound green beans, trimmed and cut into 2 inch pieces
    1 cup water
    1/2 cup packed brown sugar
    1/4 cup white sugar
    1/2 cup chopped walnuts
    1/4 teaspoon salt

    Melt the butter in a large skillet over medium heat. Add green beans; cook and stir for about 5 minutes. Mix in the walnuts, and pour in water. Cover and cook for about 10 minutes, or until very little water is left in the pan.
    Add the salt, white sugar, and brown sugar; stir until beans and walnuts are evenly coated. Cover, and cook over medium heat for 5 more minutes. Remove from the heat and allow to cool slightly before serving.

    I can't eat broccoli rabe unless it's boiled a little bit first. It's way too bitter for me otherwise...

    somehting else that is ALEWAYS great as a side or app...
    GO buy the pillsbury crescent rolls.
    PIck anyhting..spinach, spinach and cheese, ham, turkey, etc
    and you can roll it in a certain way and they make fabulous pinwheels.
    i love doing it w spinach and somehting else.

    I'm gonna call my mom just to confirm this...

    in a medium sauce pan, add some olive oil & chopped garlic . Cook for a few minutes and add broccoli rabe & salt and cover. I'm not sure how long she cooks it for and I feel like i'm missing an ingredient.
