    French Onion Soup I made yesterday.

    Felt like crap last night, so I dug up this recipe & made it....all i gotta say is wow! If your a french onion soup connoisseur you def have to try this. Doesn't get any easier. To richen it up a bit, I used a little bit more Merlot & a bit more butter than the recipe called for. Also I didn't have swiss cheese, so i subsituted for cheddar...and it still tasted good. I'll post a pic later.


    French Onion Soup

    PREP TIME 15 Min
    COOK TIME 45 Min
    READY IN 1 Hr
    SERVINGS & SCALING
    Original recipe yield: 4 servings
    US METRIC


    INGREDIENTS
    1/4 cup butter
    3 onions, thinly sliced
    1 teaspoon white sugar
    1 tablespoon all-purpose flour
    2 1/2 cups water
    1/2 cup red wine
    2 (10.5 ounce) cans condensed beef broth
    1 French baguette
    8 ounces sliced Swiss cheese


    DIRECTIONS
    Melt butter or margarine in a 4 quart saucepan. Stir in sugar. Cook onions over medium heat for 10 minutes, or until golden brown.
    Stir in flour until well blended with the onions and pan juices. Add water, wine, and beef broth; heat to boiling. Reduce heat to low. Cover soup, and simmer for 10 minutes.
    Cut four 1 inch thick slices of bread from the loaf. Toast the bread slices at 325 degrees F (165 degrees C) just until browned, about 10 minutes. Reserve the remaining bread to serve with the soup.
    Ladle soup into four 12 ounce, oven-safe bowls. Place 1 slice toasted bread on top of the soup in each bowl. Fold Swiss cheese slices, and fit onto toasted bread slices. Place soup bowls on a cookie sheet for easier handling.
    Bake at 425 degrees F (220 degrees C) for 10 minutes, or just until cheese is melted

    i used to deglaze the onions with equal parts of sherry and red wine
    and a splash of balsamic vinegar

    i made a killer french onion

    yea i wasn't sure what wine to use. I have Sherry cooking wine, but I had a cracked open bottle of Merlot...and used that instead. I'll try a lil balsamic nxt time.

    add the balsamic when deglazing, or reduce it to a syrup in a seperate sauce pan
    adds a nice little bite

    i also top it with a provolone/greyere mix
    shredded always, it melts so much nicer
    and load it up, nothing worse than getting a crcok with a paper thin melted mozz slice on there

    yea my dad makes it in a crock bowl w/ mozz cheese topped on....then broiled for a like a minute.

    I am very upset.

    After shopping tonight, I was very excited to go to Panera Bread to get a french onion soup in a bread bowl....and when I ordered the girl said they were out of bread bowls....totally ruined the whole thing for me and I ended up with broccoli cheddar.....but this is the 2nd time I have gone to panera and they have had a bread product....I should write someone a letter.
