    Does anyone have...

    Any healthy marinade ideas?


    I usually use premade marinades for my steak/chicken but most are high in sugar and sodium. Any good ideas for some healthy marinades? Some that won't take alot of ingredients? Anmy premade ones that are healthy and cost effective?

    What do all of you guys marinade your food on? I just bought a grill so I want to start grilling up some good healthy protein!

    I made a great lemon pepper for chicken with lemon juice, water, minced garlic and crushed peppercorns

    I also make one for steak with redwine vinegar, montreal seasoning or nature seasoning, worchester(sp?) sauce and orange juice

    I have one for white fish thats dijon mustard, lemon juice, salt free butter minced garlic, and chopped, fresh basil and parsley. That one I either bake in paper or grill in foil. If I am cooking steak fish like swordfish or salmon I add diced tomato.

    Sorry, I don't have measurements though...I just adjust to taste.

    They all sound really yummy and healthy. Too bad you didn't have the precise measurements because I am not the greatest cook.

    I know a great one for steak but im at work and dont know it exactly. I'll try to throw it up here next time I get a chance.

    they all originated from a book so when get home i'll pull it out and give you a better idea.

    making your own is def the way to go....all that pre-made stuff is full of sodium and such...

    i'm going to try out that lemon-peppercorn tonite...just got a bunch of chicken yesterday...

    i do this for thin chicken cutlets

    take a table spoon of olive oil,
    some green (dont' gotta be green i just like the green) salsa
    add fresh crushed garlic
    add a teaspoon of white vinegar
    add pepper a touch of lemon, and some cumin,

    let sit over night,

    awesome marinade for like chicken fajita or soft shell chix tacos.

    for meats I like to use this thing called montreal steak seasoning, a little high in sodium but it does the trick, that wiht a little olive oil and garlic in a plate over night (don't let sit too long some marinades will cook the meat)

    They make a salt free for chicken that has almost all the same spices. I like the SPICY Montreal blend. I use like half the bottle with just enough olive oil and wo. sauce to bind it together and make a steak rub. SOOOOOO good but you'll be sweating for hours.

    soy sauce
    olive oil
    1 lemon juice
    1 tablespoon brown sugar
    garlic powder
    1 garlic clove
    all purpose Greek seasoning

    or for anymeat u can use: mixtures of herbs or spices with wine, soy sauce, cider vinegar or lemon juice.

    Here goes...

    Lemon pepper marinade
    (4)-6 oz. chicken breasts
    1/3 cup lemon juice
    1 tblsp olive oil
    1 tblsp whole black peppercorns (crush in baggie w/ back of spoon)
    2 garlic cloves (minced)
    (salt to taste if you choose)

    Parchment Baked Fish
    (4) 6 oz fish steaks or filets
    2 tsp lemon juice (I doubled this!)
    4 tblsp chopped fresh herbs I use parsley and basil
    fresh pepper to taste
    4tblsp white wine or vermouth I use white vinegar and half to 2 tblsp
    4 tblsp unsalted butter (I half this also)
    1 tblsp dijon mustard
    *marinade fish no more than a few hours*
    VARIATION 1: add 2 minced garlic cloves
    VARIATION 2: for swordfish or salmon: the lady at the supermarket fish counter suggested I dice up a tomato and add it in. I tried it and LOVED it.
    (salt to taste if you choose)

    Steak Marinade
    (this one is just a gestimate because my husband taught me)
    2-8 oz steaks
    1/3 cup Worcestershire Sauce
    2 tblsp olive oil
    2 tblsp spice (montreal grill or nature seasonings)
    1 tblsp orange juice
    1 tblsp red wine vinegar

    Once you start making your own marinades you will get a feel for what flavors taste the best to you and you will begin to adjust the measurements and create your own.

    And BTW...worcestershire sauce does contain some HFCS but you are still better off using it to make your own than using pre-bought marinades containing all kinds of other additives.

    stop and shop has some good premade marinades. My favs are in the oriental foods section. Just had peanut chicken w/ brown rice last night

    Yea, I always use the Maui Mountain brands but very high in sodium and sugar so looking for some alternatives
