Recipe I made Friday night w/ my momma:
Gnocchi (mine was store bought)
Frozen Peas
Pancetta
Ricotta
Lemon
Olive Oil
Salt & Pepper
Chicken Broth
Butter
Spinach
Parm' Cheese
-Boil Gnocchi in broth
-Transfer some of the broth into another pan w/ the peas and about 1 tbsp butter
-Mix ricotta, lemon juice, olive oil, salt & pepper together
-cook pancetta and cut into very small peices
-after peas are just about done cooking mix in the gnocchi
Plate by smoothing the ricotta on a plate first, then top with the gnocchi & peas, then some chopped up spinach, pancetta & sprinkle with parm' cheese.
So yummy!
