We made this last night for dinner. came out awesome

First: gut some potatoes, carrot and turnips into about 1 inch cubes, line roasting pan with them, then toss with a generous amoumt of olive oil

Second: mic 3 tbsps of butter with 3 cloves of minced garlic, and about 2 tbspns of minced sage; rub underneath and above the skin of the chicken, all over. Place chicken on top of vegetables

Heat in over at 400 degrees for 15 minutes, then drop temp to 375 until internal temp of chicken is 165 degrees (takes about an hour after dropping temp to 375)

The veggies get crispified from the oil and chicken juices. The chicken came out perfect. So juicy and tasty
