I made some of this the other day, very easy to make and absolutely delicious. Here is my recipe.

1 Butternut squash (peeled, seeded, cut into 1" cubes)
1 Granny Smith apple (peeled, chopped)
1 med onion (chopped)
2 tbs butter
3 cups Chicken broth
salt & pepper
Nut meg
Cinnamon
Cayenne pepper

Take the butternut squash with a little olive oil, salt and pepper and bake in the over at 325 for about a half hour, this will give the butternut squash a nice flavor

In a large pot take the 2 tbs butter, onion and apple and cook until onions are translucent.

Then add 3 cups chicken broth and butternut squash, add salt, pepper, nutmeg, Cinnamon & Cayenne pepper to taste ( don't use too much cayenne) bring to boil let simmer 20 minutes.

Scoop out butternut squash, apple and onion with slotted spoon, put in food processor and puree, add puree back into chicken broth, add a little heavy cream to make it nice and rich and creamy.

Serve topped with cinnamon or nutmeg.
