So at work I have been making this wrap for myself quite often lately. It is really good...throw a spinach or jalapeno tortilla in a panini press to soften, chop up a piece of grilled chicken and throw it on the flat top with peppers, onions and mushrooms. Melt some provolone and pepper jack cheese on top after the peppers, onions and mushrooms soften and caramelize a little. Put that on the tortilla, crumble some crispy bacon on that, add giardiniera, a little ranch dressing and chipotle mayo and then either spinach or leaf lettuce. Roll it up and toast it. (we have this machine called a turbo chef, it is a oven on steroids)
