Most restaurants do not receive any but some places pool the tips and distribute percentages to bussers, waitstaff, cooks, dishwashers, hostess. A lot of places the waitstaff is responsible for giving portion to whoever they fell deserves it, like bussers and so on, but there is also the point of view of the busser and host/hostess, you will help out or do favors for the server that gives you more tips right? So when a big table comes in or big spenders the hostess will seat them in the section of the restaurant where the server that gives them the biggest cut is working. Its a twisted system.
There is also places like Charlie Trotters here where he takes all the tips. Talk about fucked up.
I am a big tipper, I usually tip between 18 and 25% depending on the service.
